Dorcas Food Pantry Donation

In mid July, several donors asked us if we could help in some way fight food insecurity during this pandemic. We went to work researching the best approach. We decided to donate $1500 to the Dorcas Ministries Food Pantry here in Cary, North Carolina, primarily because Mama Edna loved to shop at Dorcas Thrift shop to support their mission. Paying it forward was a huge part of her life, so we paid it forward. #dorcas #growyourown #foodinsecurity

Turmeric Tuesday Aug. 20th, 2019

Howdy FOLKS! Sorry we have been away for a bit, actually too long from here. But we have been exploring other social media platforms in the meanwhile. So, we hope we are back on the regular to our original blog. Please be patient with us.

This summer we played in our little garden a bit. The Summer heat did not agree with me personally this year, so the minimum was all that happened. We had a small crop of potatoes, onions, garlic, and asparagus this year. Our small square foot garden concept is perfect for us. At the moment, many variety of peppers are coming on strong and soon, we will be doing all kinds of things with them, from dehydrating them, to freezing them, some pickling and YES, fermenting some peppers. Hence why we are here today! I just tried this recipe that I wanted to share on this Turmeric Tuesday for fermented onion relish with onions, bell pepper and TURMERIC. I added a small jalapeno without the seeds to my version. This recipe gives the benefits of all it ingredients plus the added benefit of the probiotics from the ferment. Enjoy!!

Spring Juicing Garden

It’s that time of year to start prepping those seed trays for the Spring garden. We here at The Mama Edna Project like to eat, juice and blend the Rainbow. A variety of color in the different types of produce brings with it different vitamins, minerals, micro and phytonutrients. Soooooo, plant lots of different colors when you can or partner with a neighbor or two if space is limited. Trade off what you plant and then trade for varieties you need. Get creative!! Turmeric Tuesday 01.08.19

Hello fellow “juicers” and “blenders”! Let’s kick off our first official #TurmericTuesday of 2019 with a healthy dinner recipe that includes turmeric. And see many other recipes on our Pinterest board. https://www.pinterest.com/mamaednaproject/

Turmeric Chicken Curry

  • 1 pound Chicken breast
  • 1 pound cauliflower rice, fresh
  • 2 tbsp Cilantro, fresh
  • 2 cloves Garlic
  • 1 inch Ginger, grated
  • 1/2 Lime, juice and zest of
  • 1 medium white onion
  • 1 cup full fat coconut milk
  • 1/4 tsp freshly ground black pepper
  • 1 1/2 tsp sea salt
  • 1/2 tsp organic turmeric, powder
  • 4 tbsp virgin coconut oil
  • 2 tbsp coconut aminos
  • Favorite hot sauce or pepper flakes, optional

In a large saute pan, heat 2 tablespoons of the coconut oil over medium heat for the cauliflower rice. In a second saute pan, heat the other 2 tablespoons of coconut oil over medium-high heat to cook the chicken. This dish is a quick one, so cook both at the same time. Add the rice to the first pan and spread thinly across hot pan, stirring occasionally until cooked through but still firm to the teeth. Salt and pepper to taste. While the rice cooks, saute the brown the chicken, turning occasionally. At the halfway mark of being done, add the onions and saute with the chicken for about two minutes. Then add the turmeric and stir to brown the spice. Then add the ginger and garlic. Cook one minute. Stir in the coconut milk. Salt and pepper to taste. Remove from the heat. Then add the coconut aminos, lime juice and lime zest and cilantro and serve over the cauliflower rice. Add hot sauce or pepper flakes to desired “heat” level. Enjoy!!

Last Turmeric Tuesday of Breast Cancer Awareness Month!

And with only two days left of fund raising for Breast Cancer Awareness month, we’d like to share a couple wins for us this month! First, we received very generous donation from Shirley A. Harr in memory of her daughter and a long time friend of mine, Amy K Harr whom the world lost in February to breast cancer. Secondly, one of our clients, Bobbie Bingham, wanted to “Pay it Forward” to help raise money for this project. She held a Facebook fund raiser for her birthday and we just received a $550 donation from that event! Thanks Bobbie and all who supported her endeavor.
